We invite you to experience Hanashibuki’s new gourmet dining featuring the finest seasonal ingredients from the country’s food treasure trove, the Minamiboso and Tateyama region, and from around the country. We strive to create delicate dishes that reflect the beauty of the four seasons. We look forward to your visit.

Profile
Born in Hokkaido. After graduating from high school, he began working at Kagaya, one of Japan’s most famous inns, in Ishikawa Prefecture. Here he began his journey into the world of cooking. At the age of 26, Ikeda came into the spotlight when he was selected to be executive chef at the Kagaya in Taiwan. After that, he became head chef at the popular Lake Akan Tsuruga Wings Hotel in Hokkaido. He was then welcomed as sous-chef at the Hanashibuki Resort’s traditional restaurant Ki No Ne in Tateyama, transferring his trade to Chiba Prefecture. In the summer of 2016, he became head chef at Hanashibuki, where he has since developed such famed dishes as the simmered red snapper and the inn’s own custard pudding.
